At Door County Custom Meats, it is our mission to provide a place for our valued customers to receive local, farm raised meat products of the highest quality directly from our family business to your home. Door County Custom Meats is located at 5091 Bechtel Road, just 8 miles North of Sturgeon Bay off of HWY 57. Keith and Jaci Birnschein, along with their son and daughter, Cody and Savanna, truly make this a family affair.

The making and success of Door County Custom Meats came from Keith's memories of his grandfather, who worked at the local food market in Sturgeon Bay, WI, when he was a little boy. Watching and helping his grandfather inspired Keith to operate his own facility, fulfilling his grandfather's dream along with his own. The delicious products offered at Door County Custom Meats are made with Keith's grandfathers' recipes and will continue to be used while the business is in operation.

After building a brand new, state of the art, processing facility on the Birnschein's own property in Door County, Keith and his family continued to expand the business.

Catering & Pig Roasts

Door County Custom Meats specializes in pig roast catering throughout the year for weddings, anniversaries, graduations and many other special events.
If you are planning to host an event for a large group of people such as a wedding reception or company picnic, then you should feature a pig roast done by us.
You will still get the great service and all the food/supplies that you ask for but there will no longer be any on-site cooking.
We take pride in what we do and will handle your pig roast with dedication and professionalism.

We make our own products from our own family recipes.
To make it easier for you, we have included an order form that lists all our meat product options!.
Each product is available by calling us or finding us at any of our events listed on the Events Page.
We also have products for sale in several local stores and restaurants around Door County!.
Venison Processing
Report
Basic Processing includes skinning, boning, cutting, grinding burger and vacuum packing your steaks and meat.
All meat is vacuum packed in specially designed freezer-ready bags.
Basic processing includes whole tenderloins and whole back-straps unless requested differently.
The remaining portion of the deer will be cut into steaks of your choice and trimmings will be ground into burger, unless requested otherwise.
Processing normally takes 1-2 days; this does not include any specialty items including summer sausage, jerky or other additional products.
Wild Game Processing

Venison is the most common, but we can also use Goose, Pheasant, Bear, Elk, Moose, Wild Boar and more.
The only change we have made to previous methods is that we no longer cut neck roasts because we no loner use a band saw to cut venison; everything is cut and boned with a hand knife to ensure there is no cutting into the bone.
All wild game meat besides the venison that we process for you, should be brought in completely free of bones, feathers and hair.
The meat should be clean and fresh.
You take home the meat from the deer you brought in! (but remember: any deer shot to the main body ruins a large portion of the meat & we cut away any blood/bone fragments that are visible.).

Our set up was in the food court on the Town Hall parking lot right next to the beer stand.
Not only did we bring our grill and food trailer, but we also brought our farmers market trailer.
We sold tons of product and had a line for food for most of the afternoon!
We couldn't have asked for better weather!
